OUR CURRENT OFFERINGS
We have made wine non-commercially for six years, and only now are we satisfied the grapes are ready to share and consistently expressing their stunning qualities. We readily admit our palate is distinctly New World, which is rich opulent powerful Napa Cabernet that is at the same time, elegant, sophisticated, silky, balanced and refined with powerful tannins and acidity that benefits long term aging. Our excruciating hand crafted production is extremely limited (< 1000 cases total per year total) and will always be one of the rarest wines in Napa Valley.
We produce two distinct Cabernet wine bottlings from our 25 acre mountain estate vineyard.
QUANTUM LIMIT our flagship wine, is a Cabernet based blend of the vineyard across all of the blocks within the mountain estate. Depending on the vintage, it may be blended with small amounts of other Bordeaux varieties from very selective vineyards within the Napa Valley. QUANTUM LIMIT will always be at least 75% Cabernet Sauvignon and always 100% Napa Valley. Tasting notes consistently include ripe black currant, cassis, black cherry, black berry, and licorice, big tannins with balanced acidity.
TWENTY EIGHT BLOCKS is 100% Estate Cabernet typically from a single or at most two specific blocks within the entire twenty eight blocks of the vineyard. (we choose the best at harvest) The result can be characterized as an intense Napa Valley Mountain Cabernet, with extreme depth and full-bodied power. Although the specific block showcased that vintage will have its own individual characteristics, we have found the wines to consistently exhibit a backbone of deeply ripe and concentrated fruit with big black cherry and chocolate flavors with black currant, licorice, wild berry and other fruit aromas, including complex coffee, mocha and spice, leading to a long penetrating finish.

The 2019 Quantum Limit Cabernet Sauvignon Twenty Eight Blocks (100% varietal); is deep ruby and opaque; the bouquet smells like the variety and has character, all attributes we love so much about Cabernet Sauvignon. And its scents are lifted nicely by floral notes including lilac, lavender and violets with notes of red chili spice, smoked sage, old cedar and other dried herbs including thyme. Its fruit character includes red cherry, red plum, blackberry, and boysenberry. As the wine evolves further it opens to a note of milk chocolate and mocha. Balanced, with flavors of dark cherry, currant and plum, the palate lingers with a light note of dried tobacco leaf. The tannins are remarkably soft and supple at this age, 6 years post vintage; they are lightly tumbled with a rounded character. Lingers savory with flavors of dried herbs including sage and a toasted cedar. This wine is always block driven; Julian walks the blocks during harvest and identifies what he feels are the best blocks to incorporate into this bottling.
– The 2019 Quantum Limit Cabernet Sauvignon “Twenty Eight Blocks” Review by David Thompson, Napa Project (see complete review)
One of the darkest, most concentrated vintage of this 100% cabernet sauvignon. True classic Napa darkness, layered between sweet cherry and dark blackberry. The tannin structure is starting to melt into spices and garrigue to complement the dark touched of French oak that structure the mouthfeel.
– Julien Fayard, Winemaker
The exuberant bouquet of the 2019 shows notes of huckleberry jam, crème de cassis, and a touch of menthol. Juicy, soft, and supple on the palate, with hints of warm baking spices on the finish.

2020 QUANTUM LIMIT CABERNET SAUVIGNON
The wildfires in Napa such as the Glass Fire did not impact Quantum Limit in 2020. The grapes were harvested in early September fermented in stainless steel and aged in 100% new and mixed French oak. The wine was blended with 18% Napa Valley Petit Verdot giving it a deep color and structural backbone of black cherries, plum and blueberries, and features a velvet-lined profile with notes of jasmine, violet and sage, accented by hints of black pepper, with a prominent finish of graphite and slate. This is wine is a great accompaniment to meat dish such as grilled lamb or roasted duck or a pasta in a rich and hearty puttanesca sauce.

2021 II MAREMMANO CHARDONNAY
This is our inaugural 100% chardonnay, dedicated to Il Maremmano, the unique Tuscan breed of vineyard livestock guardian dogs found in Maremmano, Italy…. and at Quantum Limit. It is a Burgundian/Montrachet-styled, Napa Carneros sourced chardonnay, where we painstakingly focused on sourcing grapes that expressed intense minerality. Grown in the eastern hills of Carneros, these old Wente grapes were handpicked at night and whole cluster pressed into 60% new French oak, and barrel fermented for 14 months. The wine is a glorious intersection of finesse and power, with green melon and pear skin, faint lychee and honeysuckle with lemon pitch, complemented with light soft and burnt toasted oak, with gorgeous lingering salinity and finished with perfectly judged acidity as the flavor sensation unravels in the mouth long after the wine is gone. Aged in new French oak for 14 months. This wine will age for years. Rebecca Byrnes says, “This is a cab drinkers chardonnay”. Glenn Rice says “Julien Fayard has hit this out of the park—he is an emerging player in the pantheon of Hobbs, Michaels and Kongsgaard –it is already one of my favorite all time chardonnays— from the Burgundian minerality, gorgeous fresh fruit and citrus notes, the focus, both pure and precise in every way— a wine that will be off the charts after five years of aging”. The 2021 Quantum Limit Il Maremmano Chardonnay Carneros Napa Valley was whole cluster pressed into 60% new French oak barrels; its barrel fermentation was cold and slow, lasting for 14 months. This wine is deep gold in color; the first aroma we noted was of freshly harvested honeycomb, which reminded us of when maintained our own bee hives in Calistoga before they all burned in the Tubbs Fire in 2017. Despite the vineyard source being the same as the 2022 vintage the aromatics are distinctly different. Other scents include jasmine and stone fruits of peach, apricot, yellow nectarine and pineapple. On the palate it expresses both ripeness but also freshness. This wine is absolutely singing at this age, four years post vintage. Its flavors include apricot, pineapple, honeycomb, peach, yellow nectarines, mango and papaya. Brightly lit, the vivacious acidity nicely complements the rich texture. The radiant finish lingers both balanced with a gentle character. While the 2022 bottling is more of a meal in the glass, this vintage is perhap.
– 2021 Quantum Limit Il Maremmano Chardonnay Review by David Thompson, Napa Project (see complete review)
Il Maremmano is a pure Carneros chardonnay blend of stainless steel and oak, resulting in a balanced and complex wine. The stainless steel fermentation preserves the vibrant fruit flavors, while the oak aging adds richness and creamy texture.
A perfect harmony of freshness and depth.
– Julien Fayard, WInemaker
A silky Chardonnay underpinned by refreshing acidity, with hints of lemon curd and vanilla intermingling with a touch of saltiness.

The 2021 Quantum Limit Cabernet Franc. The Cabernet Franc was sourced from a site in Oakville with the blend including 4% Cabernet Sauvignon and 1% Petit Verdot. This one-off bottling was aged 22 months in both new and neutral oak. This is a riper expression of this variety both in terms of the bouquet and the palate. This wine is deep ruby and opaque; the bouquet smells both fruity but also fresh. Its aromas include cherry fruit roll up; dark fig, blackberry, boysenberry, Pakistani mulberry and dark spices including cloves. Plush across the palate and dark fruited, its flavors are of Satsuma plum, dark cherry, blackberry and boysenberry jam. The palate is brightly lit, fresh and balanced and lingers with a note of dust, dried sage, dried tobacco leaf and a persistent chalky character. We love this type of texture; firm enough to be noticeable but not overtly edgy or grippy. The tannins are lightly grainy and well-integrated in the finish.
– The 2021 Quantum Limit Cabernet Franc Review by David Thompson, Napa Project (see complete review)
Rich, dark, and dense on the nose, the 2021 Cabernet Franc brings together hints of blueberries, plums, crushed violets, dark chocolate, and tobacco. The wine shows great breadth on palate, with supple yet present tannins and a touch of franc pepperiness and spice on the finish.

The 2021 Quantum Limit Cabernet Sauvignon Twenty Eight blocks is 96% Cabernet Sauvignon, 3% Merlot and 1% Merlot and was aged for 20 months in French oak barrels; this wine is deep ruby, opaque and the rim is an amaranthine color. The bouquet is a bit shyer than the 2019 vintage. It smells minerally and chalky, with sweetly fruited scents of Santa Rosa plum, dark raspberry, red cherry, currant and a hint of tomato leaf. Higher toned the bouquet also offers a floral component including of violets and lilacs. It is surprisingly plush and supple across the palate, especially on the entry. Fully ripe it sports a lovely flavor profile of dark cherry, boysenberry, blackberry, mulberry and dark chocolate. The tannins linger with a noticeable full-coating density, a moderate gravelly and grainy grip, with an accompanying dusty/drying character. The texture is one of the hallmark characteristics of this wine. This bottling is already showing in a sweet spot 4 years post vintage and has loads of life ahead with the proper aging.
– The 2021 Quantum Limit Cabernet Sauvignon “Twenty Eight Blocks” Review by David Thompson, Napa Project (see complete review)
Pure cabernet, from a combination of hillsides, the 2021 vintage exudes rich ripe cherry and sweet round tannins. Under the cherry texture, the ripeness combined with the 100% French oak barrel brings a black backbone or dark fruit laced elegantly. Powerful structure feels the palate and leaves hints of spices and blue fruit.
– Julien Fayard, Winemaker
The 2021 Quantum Limit is a deep, brooding wine, with brambly fruit overlain with vanilla and spice. Both flavor and texture rise to a crescendo, with gripping tannins and a rich, robust finish.

2022 Il MAREMMANO CHARDONNAY
This vintage 2022 chardonnay is sourced from Fire Tree vineyards in Carneros, Napa Valley. Fruit was picked in six rounds of harvest to optimize ripeness, but also increasing complexity with both early and late harvests. The fermentation was in both stainless and oak, and underwent 100% malolactic fermentation and aged in new oak. The style is the classic Julien Fayard Burgundian style, slightly softer than the 2021, with beautiful balance, texture and natural acidity.

The 2022 Quantum Limit Il Maremmano Chardonnay; this wine is deep gold in in color; the bouquet is a beautiful expression of the variety, fully ripe but not over ripe and with its influence from oak a complementary character. Its scents include honeysuckle, golden apples, melon, a baking spice sweetness and a light note of caramelized sugars. On the palate there are flavors of golden delicious apples, Golden kiwi, apricot, peaches, yellow nectarine, pineapple and a lingering note of toasted nuts. And a hint of popcorn, especially on the finish; this aromatic is not buttery but of the popcorn itself. While this vintage isn’t quite as bright as the 2021, it is superbly balanced. The mouth feel is rounded, creamy and sports a silken texture. Lingers rich, warm and ripe with a well-endowed and persistent finish. This wine is sourced on the Napa Valley side of Carneros; to the north of Hudson Vineyard, growing on rolling hillsides. It is crafted by Julien Fayard with instructions from owner Cynthia to ‘always make this wine as Burgundian as possible’!
– 2022 Quantum Limit Il Maremmano Chardonnay Review by David Thompson, Napa Project (see complete review)
A beautiful textural chardonnay with ripe peach and lemon curd, classic Carneros lychee and pear, white flowers, and with a hint of grilled almonds and vanilla. I just get a great natural acidity with this wine, with excellent mid palate texture. I see this wine standing up to a stir fried wok spicy lobster or pairing beautifully with a more delicate dish such as Dungeness crab and avocado on melba toast.

2022 ENTANGLED
The premier landmark wine “Entangled’ is a wine blended from excruciatingly sourced vineyards from the most prestigious appellations of Bordeaux. This wine was harvested, fermented, aged in the cellars and blended with the team at the historic Lynch-Bages in Pauillac. Lynch-Bages, founded in the 17th century, is renowned for producing some of the most powerful and structured wines in Bordeaux. The appellations that were sourced for this wine include both Right and Left Bank vineyards including the renown L’Enclos vineyard that was acclaimed as one of the world’s top ten historic vineyards in The Wine Spectator in 2024. The blending team included Nicolas Labenne, Philippe Melka and the proprietors of Quantum Limit, and took place three times—once in Bordeaux, once while cruising in the Chilean Patagonian fjords, and a final blending with an independent team of sommeliers while traveling across Drakes Passage in the Antarctic via Zoom conference into Bordeaux! The final blend was a mix of 70% cabernet sauvignon (from the vineyards L’Enclos in Pauillac, Le Marquis in Margaux and Demi Lume from Saint-Estephe); 25% merlot (from the vineyards Le Plateau in Fronsac and Les Terrasses in Saint Emillion); and 5% cabernet franc from La Carriere in Saint-Emilion).
This is a wine that is representative of new world Napa energy and complexity, simultaneously entangled with classic refined French structure and sensibility. It is a new world Napa Valley reinterpretation of a historic Bordeaux classic, creating a wine with extraordinary aging potential and the promise of unparalleled tasting experiences. While youthful now, Entangled is expected to improve for aging into peak 2026-2030. Enjoy a unique and unparalleled Napa and Bordeaux Entangled Moment.

In partnership with the team at Château Lynch-Bages, in Bordeaux, Quantum Limit creates a single Cabernet Sauvignon dominated red wine each year called Entanglement. The focus of blending this wine is to use grapes from 12 premium vineyards from both the left and right banks in Bordeaux using Lynch-Bages’ premier choice lots that are blended for its own Estate wine, but in this case, a Quantum blend that would more resemble a new world wine. One of the vineyard sites is L’Enclos, a vineyard that was highlighted by The Wine Spectator in 2024 as being one of the world’s top ten historic vineyards. The 2022 Entangled Quantum Limit is 70% Cabernet Sauvignon, 25% Merlot and 5% Cabernet Franc. This wine is noticeably more restrained aromatically then a Napa Valley Cabernet Sauvignon; it is deep ruby and opaque. The nose reveals scents of violets, lavender, a light red chili spice, dried tobacco leaf and red plum. As the wine evolves it opens to additional scents including a light barrel influenced spice. The palate is darkly fruited and savory with flavors of dark plum, blackberry and dark currant. This wine features plenty of textural depth and lingers dusty and chalky with notes of dried tobacco and dried herbs. Minerally. Pencil shavings. The firmly gripping still tight and edgy tannins linger with a persistent drying grip which far outpaces the fruit on the finish. As this age, this wine needs lots of time in the glass; but those who let it fully express itself will be rewarded.
